1. Cube salmon and place in a bowl. 2. Marinate with 1 tbsp olive oil, 1 tsp each of salt, garlic powder, onion powder, paprika, cajun seasoning, and juice of 1 lime. 3. Boil 1 can of coconut milk, 1 cup rice, 1 tsp salt and lime juice. Simmer covered for 20 minutes. 4. Air fry marinated salmon for 12-15 mins at 390ºF. 5. For crema, blend 3 tbsp Greek yogurt, jalapeño, 2 garlic cloves, 1 tsp salt, and lime juice. 6. Assemble bowl: coconut rice, salmon, black beans, corn salsa, and lime crema on top.
