Healthy chicken nuggets packed with veggies, perfect for toddlers and made in an air fryer for a quick meal. These nuggets use ground chicken, finely chopped broccoli and carrots, and are coated with panko breadcrumbs for a crunchy texture.

1: Soften the broccoli in the microwave for 2–3 minutes, then finely chop. 2: Grate the carrots. 3: In a large bowl, combine the ground chicken, broccoli, carrots, cheese, seasonings, and ½ cup breadcrumbs. Mix until evenly combined. 4: Scoop and form nugget-sized pieces (about 1½ tablespoons each). 5: Dip each nugget in the beaten egg, then roll in panko to coat. 6: Preheat the air fryer to 375°F. Lightly spray the basket with oil. 7: Arrange nuggets in a single layer and air fry for 10–12 minutes, flipping halfway through, until golden and cooked through (165°F internal temperature). 8: Let them rest a few minutes before serving.
