A cozy Italian soup inspired by Olive Garden, made in a Dutch oven with ground pork or beef and a variety of vegetables and beans.

1: Heat 1 tbsp of olive oil in a Dutch oven or large pot. Add ground pork and season with salt, pepper, oregano, thyme, basil, and red chili flakes. Cook until fully browned, then remove and set aside. 2: Add another tbsp of olive oil and combine the diced carrots, celery, onion, and minced garlic. Allow them to cook down for about 5-8 minutes. 3: Add diced tomatoes, red kidney beans, great northern beans, tomato sauce, chicken broth, and the cooked pork. Toss in a Parmesan rind if you have one. 4: Simmer the soup for up to 1 hour, adding salt and pepper to taste. 5: Just before serving, add your favorite soup noodles. Garnish with fresh parsley and Parmesan cheese.
