I have been obsessing over making these cottage cheese eggs. They’re a great way to get in a lot of protein in the morning and they’re delicious/taste like restaurant-quality soft scrambled eggs.

1. Heat a skillet over low heat and melt 1 tbsp of butter. 2. Crack the eggs into a bowl and scramble them. 3. Pour the scrambled eggs into the skillet and use a rubber spatula to continuously fold them gently for about 1 minute. 4. Add the cottage cheese into the skillet and fold it into the eggs. 5. Continue folding the eggs and cottage cheese mixture until it comes together, cooking low and slow for approximately 5 minutes to achieve a soft scramble. 6. Serve with cracked pepper and flaky sea salt.
