1. Heat the olive oil in a large pot over medium-high heat. Add the carrots, celery, and onion and cook, stirring occasionally, until the veggies soften, about 5–7 minutes. 2. Stir in the garlic and cook until fragrant. Sprinkle in the flour and mix well, letting it cook for about a minute. 3. Slowly pour in the chicken bone broth while stirring to keep the soup smooth. Add the Italian seasoning, then place the chicken breasts into the pot and bring everything to a boil. 4. Reduce the heat and let the soup simmer, until the chicken is fully cooked, about 15 minutes. 5. Remove the chicken from the pot and cut into bite-sized pieces. Add chicken to the soup, then stir in the orzo. 6. Continue cooking until the orzo is al dente, stirring often for 10ish min. Add the spinach and cook until wilted. 7. Finish with the lemon zest, fresh dill, Parmesan, and salt & pepper on top. Enjoy!!
