A healthier twist on mac and cheese made with cauliflower, spinach, and cheddar cheese, ready in just 20 minutes.

1: Bring a large pot of salted water to a boil. Cook the cauliflower until tender, then drain and transfer to a blender. 2: In the same pot, cook the pasta noodles until al dente. 3: To the blender with the cauliflower, add spinach, cheddar cheese, milk, salt, garlic powder, and nutritional yeast. Blend until smooth. Adjust seasoning with more salt to taste if needed. 4: Once the pasta is cooked, drain it and return it to the pot. Pour the creamy sauce over the pasta and mix well to coat. 5: Serve the creamy cauliflower spinach pasta with cracked pepper and parmesan cheese on top.
