1.Preheat oven to 375º and line a 8x8 pan with oil and parchement paper. 2.In a large bowl, mix together the granulated sugar, brown sugar, eggs, vanilla, espresso, and salt. Mix until the batter becomes light and thick (10 minutes). If you have a stand mixer or hand mixer it will be easier and quicker. 3.Melt the butter, dark chocolate, and semi-sweet chocolate in a bowl over boiling water. Continue to stir until everything is melted. 4.Add the melted chocolate into the light batter and mix together. 5.Add in the flour and cocoa powder and mix with a rubber spatula until no flour streaks can be seen. 6.Pour into the pan and sprinkle with flaky sea salt (optional). Bake for 25-35 minutes or until a toothpick comes out clean. 7.Sprinkle with more salt and allow to cool for 30 minutes.
