1: Roast beets and garlic in the oven or air fryer for 30-40 minutes or until tender. 2: Boil water (make sure to salt your water like the sea) and cook the pasta. 3: Once beets are tender, peel skin and cut. 4: Add beets, ricotta cheese, lemon juice, and garlic to a blender and blend until smooth. 5: Add beet sauce to pasta (add salt/pepper to taste and pasta water to your desired texture). 6: Serve with mint and ricotta cheese on top.
