A cozy Italian soup, copycat of Olive Garden's Pasta Fagioli, perfect for a Dutch Oven.

1. Heat 1 tbsp of olive oil in a Dutch oven or large pot. Add ground pork and season it with salt, pepper, oregano, thyme, basil, and red chili flakes. Cook until fully browned, then remove and set aside. 2. Add another tbsp of olive oil and combine the diced carrots, celery, onion, and minced garlic. Allow them to cook down for about 5-8 minutes. 3. Add diced tomatoes, red kidney beans, great northern beans, tomato sauce, chicken broth, and the cooked pork. You can toss in a Parmesan rind if you have one. 4. Simmer the soup for up to 1 hour, adding salt and pepper to taste. 5. Just before serving, add your favorite soup noodles. Garnish with fresh parsley and Parmesan cheese.
