I’ve been making this soup since 2016😉 and it never lets me down. It’s my go-to when I’m sick or just want something cozy that’s simple, comforting, and packed with protein and nutrients.

1. Add olive oil, onion, carrots, and celery to a large pot. Cover and cook until the veggies soften. 2. Stir in the garlic and cook until fragrant, then add the seasoning and let it toast for about 1 minute. 3. Pour in the broth, cover, and bring to a boil. 4. Add the chicken, cover, and cook for about 8 minutes. Remove, shred or chop, then add it back to the pot. 5. Season with salt and pepper, add parsley and lemon juice, then cover and simmer everything together for 10 minutes. 6. Add cooked noodles to the soup or keep them separate. Finish with extra lemon, salt, pepper, parsley, and cheese if you like. Enjoy!!
