1. Preheat oven to 375ºF and line a baking sheet with parchment paper. Arrange bacon slices on the sheet and bake for 15 minutes or until crispy. Pat lightly to remove excess oil and set aside. 2. In a large bowl, combine flour, sugar, baking powder, and salt. Add milk, egg, and melted butter. Whisk until smooth and no flour streaks remain. 3. Dip each bacon slice into the pancake batter, using a fork to coat evenly. Transfer to a skillet greased with oil over medium heat. 4. Cook bacon pancakes for about 4 minutes on each side until golden brown. Repeat for each bacon slice. 5. Serve with powdered sugar and maple syrup for dipping.
