1: In a bowl, marinate the chicken with 1 tbsp olive oil, 1 tbsp lime juice, salt, pepper, paprika, parsley, oregano, thyme, garlic powder, and onion powder. Ensure each side of the chicken is evenly coated. 2: Place the chicken in the air fryer, skin side up, and cook at 375°F for 22 minutes, flipping halfway through. 3: While the chicken cooks, prepare the chimichurri sauce. Combine 1/2 cup olive oil with chopped parsley, diced shallot, minced garlic, red wine vinegar, oregano, chili flakes, lime juice, and salt and pepper to taste. Mix well. 4: Serve the chicken thighs with chimichurri sauce drizzled on top or as a dipping sauce.
