An anti-inflammatory dinner featuring Greek-style salmon, bone broth brown rice, zucchini fries, and homemade tzatziki, perfect for a healthy and flavorful meal.

1. Add rice, broth, salt, and butter to a pot. Bring to a boil, then reduce heat and simmer, covered, until soft and fluffy. 2. Preheat oven to 425°F and line a baking sheet with parchment paper. Toss zucchini with olive oil, Italian seasoning, salt, and pepper. Arrange skin-side down with space between each piece. Sprinkle with parmesan if desired and bake 15 minutes, or until golden. 3. In a bowl or directly in the air fryer basket, coat salmon with olive oil and Dijon, then season evenly. Air fry at 375°F for 10–12 minutes, until tender and flaky. 4. Mix together yogurt, cucumber, garlic, lemon juice, olive oil, vinegar, dill, salt, and pepper. Chill until ready to serve. 5. Layer brown rice, salmon, zucchini fries, and a big spoonful of tzatziki & enjoy!!
