This is my copycat Olive Garden Pasta Fagioli 🍜 I’ve been enjoying this soup for as long as I can remember. It’s hearty and packed with protein. I’ve included the full recipe below for you to try 🗒️

1. Heat 1 tablespoon of olive oil in a Dutch oven. Add the ground pork and season it with salt, pepper, oregano, thyme, basil, and red chili flakes. Cook until fully browned, then remove from the Dutch oven and set it aside. 2. In the same Dutch oven, add another tablespoon of olive oil and combine the diced carrots, celery, onion, and minced garlic. Allow them to cook down for about 5-8 minutes. 3. Add the diced tomatoes, red kidney beans, great northern beans, tomato sauce, chicken broth, and the cooked pork. Optionally, you can toss in a Parmesan rind if you have one. 4. Simmer the soup for up to 1 hour, adjusting the salt and pepper to your taste. 5. Just before serving, add your favorite soup noodles. Garnish with fresh parsley and Parmesan cheese on top.
