1: Char Poblanos, Scallions, Red Onion, Garlic Cloves with a drizzle of Olive Oil. 2: Place Poblanos in a Ziplock bag and allow to cool. 3: Once cooled, remove skin, stem, and seeds from the Poblanos. 4: In a blender, add Poblanos, Garlic, Scallions, Red Onion, Greek Yogurt, Cilantro, Lime Juice, and Salt/Pepper to taste. 5: Blend until smooth and creamy. 6: Serve with Chicken or Steak.
