A delicious pesto chicken pasta dish made with seasoned chicken breast, cherry tomatoes, and al dente penne pasta, all coated with a flavorful homemade pesto sauce.

1: In a food processor, blend pine nuts, garlic, and lemon juice until finely ground. Add basil, salt, and pepper, then blend again. With the motor running, drizzle in the olive oil until smooth and spoonable. Taste and adjust seasoning as needed. 2: Warm your griddle on low and lightly grease with avocado oil. 3: Add cherry tomatoes and minced garlic to the griddle. Stir, then cover with a dome until the tomatoes soften and burst. 4: On another section, add chicken cubes with a drizzle of avocado oil and all the seasonings. Toss to coat and cook until golden brown and the chicken reaches 165ºF. 5: Mix chicken and tomatoes together, then add the cooked pasta. Spoon pesto over the top and toss until well coated. Finish with Parmesan cheese & enjoy!
