Anti-Inflammatory Crispy Cod Dinner💫🍴 Comment RECIPE for more anti-inflammatory meal ideas or visit my website https://provecho.co/flavorsbyfrangipane Recipe Bone Broth Brown Rice: (start with this) -2 cups chicken bone broth -1 cup brown rice -1 tbsp butter -Pinch of salt Breaded Cod: -1 lb cod fillets, patted dry -1 cup whole wheat breadcrumbs -1 tsp garlic powder -½ tsp onion powder -½ tsp paprika -Salt & pepper, to taste -1 egg -1 tbsp mayo or mustard (helps the coating stick) -Olive oil or avocado oil spray Roasted Asparagus: -1 bunch asparagus, ends trimmed -1 tbsp olive oil -Salt & pepper, to taste 1. Add the rice, broth, butter, and salt to a pot. Bring to a boil, then lower the heat, cover, and simmer until the rice is soft and fluffy. 2. Preheat the oven to 400°F. Toss the asparagus with olive oil, salt, and pepper, spread on a baking sheet, and roast for 10–15 minutes until tender with lightly crisped edges. 3. In one bowl, whisk the egg with the mayo or mustard. In another bowl, mix the breadcrumbs, garlic powder, onion powder, paprika, salt, and pepper. Dip each cod fillet into the egg mixture, then coat well in the breadcrumbs. 4. Lightly spray the air fryer basket and place the cod in a single layer. Spray the tops and air fry at 400°F for 10–12 minutes, flipping halfway, until flaky. (Or bake in oven at 400°F for 15–18 minutes.) 5. Spoon in the brown rice, top with cod and roasted asparagus, and a drizzle of honey. Enjoy!!
