1. Boil pasta in salted water according to package instructions. Reserve 1 cup of pasta water before draining. 2. Heat olive oil in a large skillet over medium heat. Add onion and garlic, cooking until soft and fragrant. 3. Stir in tomato paste and cook for 2 minutes. Slowly pour in heavy cream, whisking to combine. 4. Add Italian seasoning, Parmesan cheese, salt, and pepper. Let the sauce simmer for 3-5 minutes. 5. Toss the cooked pasta into the sauce, coating evenly. 6. Add reserved pasta water, a little at a time, if a smoother consistency is desired. 7. Sprinkle with extra Parmesan and parsley before serving.
