What you need

cup white rice

tsp smoked paprika

lime

tsp onion powder

oz coconut milk

tomatillo salsa

tbsp plain greek yogurt

black beans

tsp cajun seasoning

tsp garlic powder

Instructions
1. Cube salmon and place in a bowl. 2. Marinate with 1 tbsp olive oil, 1 tsp each of salt, garlic powder, onion powder, paprika, cajun seasoning, and juice of 1 lime. 3. Boil 1 can of coconut milk, 1 cup rice, 1 tsp salt and lime juice. Simmer covered for 20 minutes. 4. Air fry marinated salmon for 12-15 mins at 390ºF. 5. For crema, blend 3 tbsp Greek yogurt, jalapeño, 2 garlic cloves, 1 tsp salt, and lime juice. 6. Assemble bowl: coconut rice, salmon, black beans, corn salsa, and lime crema on top.View original recipe
