You can also microwave them for a quicker option. 3.While those cook, add olive oil and ground beef to a pan over medium heat and break it up as it cooks. 4.Once browned, stir in the taco seasoning, salt, and pepper. Let it simmer for a few minutes. 5.Mash your avocado with a little salt (and lemon or lime juice if you have it). 6.Once the sweet potatoes are done, let them sit for a few minutes, then press the center to open them up like a bowl. 7.Fill with the ground beef, avocado, cottage cheese, a little shredded cheese if using, and green onions. 8.Finish with a light drizzle of honey & enjoy!!
