A quick and easy one-pan weeknight dinner featuring flavorful mini beef meatballs cooked with pasta in a creamy marinara sauce, finished with fresh spinach and Parmesan cheese.
1. Mix the ground beef with 1 tsp kosher salt, 0.5 tsp black pepper, 1 tsp each of paprika, oregano, thyme, garlic powder, onion powder, and parsley. Wet your hands with a little water and roll the mixture into mini meatballs, around 1-2 tsp each.
2. Brown the meatballs in olive oil in a large pan, then remove them. If there's a lot of fat, you can clean some out.
3. Sauté the diced onion and minced garlic in the same pan.
4. Add the pasta, chicken broth, and heavy cream to the pan. Cover and simmer, adding more broth if needed, until the pasta is tender.
5. Stir in the marinara sauce, butter, Parmesan, and the browned meatballs.
6. Cook until the pasta is al dente and the sauce is creamy.
7. Add in the chopped spinach and wilt it down.
8. Season with salt & pepper to taste. Top with extra Parmesan cheese and enjoy!
