Pasta Fagioli (Olive Garden Copycat)

What you need

oz parmesan cheese
bunch fresh parsley

oz canned diced tomatoes

lb ground meat

tsp dried thyme

noodles
tsp red chili flakes

yellow onion
cup chicken broth
tsp oregano

oz red kidney beans

celery stalk

clove garlic clove

tbsp olive oil

carrot

tsp table salt

oz tomato sauce

tsp pepper

tsp basil

oz great northern beans
Instructions
1. Heat 1 tbsp of olive oil in a Dutch oven or large pot. Add ground pork and season it with salt, pepper, oregano, thyme, basil, and red chili flakes. Cook until fully browned, then remove and set aside. 2. Add another tbsp of olive oil and combine the diced carrots, celery, onion, and minced garlic. Allow them to cook down for about 5-8 minutes. 3. Add diced tomatoes, red kidney beans, great northern beans, tomato sauce, chicken broth, and the cooked pork. You can toss in a Parmesan rind if you have one. 4. Simmer the soup for up to 1 hour, adding salt and pepper to taste. 5. Just before serving, add your favorite soup noodles.
