Instructions
1: Marinate chicken breasts with olive oil and the spices listed above. Grill the chicken on a hot grill until the internal temperature reaches 165ºF. You can cook them indoors too, but I love the taste of grill marks for this salad. Slice the chicken once it’s done. 2: You’ll need around 6 peaches for this recipe. Slice them and remove the pits. Place them flesh side down on the grill. They’ll cook quickly—remove them when they’re soft, about 3-5 minutes. 3: For the salad dressing, mix together the ingredients listed above. 4: Assemble the salad with grilled peaches, arugula, sliced chicken, candied pecans (optional, for a nice crunch), burrata, and prosciutto.
