Boil until the potatoes are soft and a fork can pierce them. 2: Preheat the oven to 400°F and line a baking sheet with parchment paper. 3: Drain the potatoes, ensuring they are dry, and lay them on the baking sheet. 4: Using a flat-bottomed object, smash each potato. 5: Mix the melted butter with 1/2 tsp salt, 1/2 tsp pepper, and the Cajun seasoning. Brush each potato with the butter mixture. 6: Bake in the oven for 20-30 minutes or until the potatoes reach your desired level of crispiness. 7: While the potatoes are baking, add the avocado, olive oil, lemon/lime juice, cilantro, Greek yogurt, and salt to taste in a food processor.
