LEMON BLUEBERRY LOAF

What you need

cup all purpose flour
tsp salt

tsp baking powder
egg

cup sour cream

tsp vanilla extract
cup vegetable oil
tbsp lemon

cup granulated cane sugar
Instructions
1. Preheat the oven to 350º and line a loaf pan with parchment paper. 2. In a bowl, combine sugar, lemon zest, oil, and vanilla. Whisk together until well mixed. 3. Add eggs to the mixture and whisk until smooth. 4. Incorporate sour cream and lemon juice, mixing well. 5. Add baking powder, salt, and flour, and mix until there are no dry streaks of flour. 6. Gently fold in 1 cup of berries using a rubber spatula. 7. Pour the batter into the loaf pan and top it with the remaining cup of blueberries, gently pressing them in. Sprinkle sugar on top. 8. Bake for 70-80 minutes or until a toothpick comes out clean. Allow it to cool for 20 minutes before cutting and serving.View original recipe
