What you need

lb ground lamb

fl oz lemon juice

cup greek yogurt

tsp black pepper

tsp oregano
tsp salt

cup panko breadcrumbs

red onion

tsp thyme

Instructions
1: Preheat oven to 400°F. 2: In a large bowl, mix together ground lamb, spices, egg, and panko until just combined. 3: Roll into meatballs (about 1 ½ tablespoons each) and place on a parchment-lined baking sheet. 4: Bake for 18–20 minutes, until browned and cooked through. 5: In a bowl, stir together yogurt, grated cucumber, garlic, lemon juice, olive oil, red wine vinegar (if using), dill, salt, and pepper. Chill until serving. 6: Combine tomatoes, cucumber, and onion in a bowl. Drizzle with olive oil, lemon juice, and season with dill, salt, and pepper. Toss gently. 7: Plate the lamb meatballs with a scoop of tzatziki and a side of Mediterranean salad. Add warm pita or rice on the side if you’d like.View original recipe
