Hawaiian Pulled Pork

A delicious Hawaiian-inspired pulled pork made quickly in the Instant Pot. This recipe features tender pork seasoned with spices and simmered with pineapple juice and BBQ sauce, served in bowls with rice, coleslaw, and fresh toppings.

What you need
tbsp apple cider vinegar

cup pineapple juice
tsp salt

cup cooked rice

tsp black pepper

cup soy sauce

tsp garlic powder

tsp paprika

pineapple chunks
tbsp brown sugar

tsp onion powder

black beans

bunch green onion

lime

coleslaw mix

slice hass avocado

cup barbecue sauce
lb pork roast
Instructions
1: In a large bowl, season the pork chunks with salt, pepper, paprika, garlic powder, onion powder, and brown sugar. Rub the spices evenly into the meat. 2: Preheat the inner pot for 10 minutes on Saute high and heat the olive oil. Sear the pork on all sides until browned, about 2–3 minutes per side. Press Cancel when done. 3: Pour in the pineapple juice, BBQ sauce, soy sauce, and apple cider vinegar. Stir to combine. 4: Seal the lid and set the Instant Pot to Pressure Cook on high for 40 minutes. When the time is up, allow for 15 minutes of natural release, then carefully quick-release the remaining pressure. 5: Shred the pork with two forks, tossing it back into the sauce. 6: To assemble, start with a scoop of rice, top with pulled pork, pineapple chunks, coleslaw, black beans, avocado, and green onions.
