CINNAMON TOAST CRUNCH MUFFINS

What you need

cup confectioners sugar

cup light-brown sugar

cup milk

cup sour cream

tbsp ground cinnamon

tbsp vanilla extract

egg

cup granulated cane sugar

cup unsalted butter
tsp salt

tsp baking powder

tsp baking soda

cup all purpose flour
Instructions
1. Preheat the oven to 350ºF and line a pan with muffin liners. 2. Prepare the cinnamon dust by mixing brown sugar, cinnamon, and flour in a bowl. Add in the chilled butter and mix well. Set aside. 3. In a separate bowl, combine flour, baking soda, baking powder, and salt. Set aside. 4. In a stand mixer or bowl, cream together the room temp butter and sugar until fluffy. 5. Add eggs one at a time, followed by vanilla, mixing well. 6. Blend in sour cream until smooth. 7. Incorporate the flour mixture and milk into the batter, mixing for 2 minutes until thick. 8. Spoon a small amount of batter into each muffin liner. Sprinkle with cinnamon dust and top with additional batter, finishing with more cinnamon dust. 9. Bake for 25-30 minutes or until a toothpick comes out clean. 10. While the muffins are baking, prepare the icing by whisking together confectioners sugar, vanilla, and heavy cream until smooth. 11. Drizzle the icing over the hot muffins as soon as they come out of the oven.View original recipe
