Anti-Inflammatory Baked Chicken Dinner

A quick and easy anti-inflammatory baked chicken dinner featuring honey mustard chicken, mashed sweet potatoes, and roasted carrots, designed to be made in about 30 minutes.

What you need

tsp pepper

tsp garlic powder

tsp ground cumin

tbsp whole grain mustard

tbsp dijon mustard

fl oz lemon juice

tsp paprika

tbsp olive oil

tbsp honey
splash cream
tsp dried italian seasoning

tsp thyme

sweet potato
lb chicken thigh

tsp onion powder

bunch carrot
Instructions
1. Bring a pot of salted water to a boil. Add the sweet potatoes and cook until very tender. Drain and mash with salt, pepper, garlic powder, and a splash of cream or maple butter. Set aside. 2. Toss the sliced carrots with olive oil, paprika, cumin, salt, pepper, and thyme. Spread on a sheet pan and roast at 400°F for about 20 to 25 minutes, or until softened and lightly caramelized. 3. In a bowl, stir together the Dijon, whole grain mustard, honey, olive oil, lemon juice, turmeric, paprika, onion, & garlic powder, Italian seasoning, salt, and pepper. Add the chicken and coat evenly. Let it sit for 10 to 15 minutes. 4. Place the chicken in a baking dish and bake at 400°F for 25 to 30 minutes, or until the chicken is cooked through and the sauce is bubbling. 5. Spoon the extra sauce from the pan over the chicken.
