What you need

pepper
bunch fresh dill

fl oz lemon juice

lemon

splash red wine vinegar

tsp oregano

lb ground lamb

cup greek yogurt

tbsp olive oil

red onion

roma tomato

cup panko breadcrumbs

tsp dried thyme

tsp garlic powder

clove garlic clove

tsp onion powder

tsp paprika
Instructions
1. Heat oven to 400°F. Add the lamb, spices (salt, garlic powder, onion powder, paprika, oregano, thyme, black pepper), egg, and panko to a bowl and mix just until combined. Roll into meatballs, about 1½ tablespoons each, and place on a parchment-lined baking sheet. Bake for 18 to 20 minutes until cooked through. 2. Stir together all of the tzatziki ingredients (Greek yogurt, grated cucumber, minced garlic clove, lemon juice, olive oil, optional red wine vinegar, chopped fresh dill, salt, black pepper) in a bowl. Taste and adjust seasoning, then chill until ready to use. 3. Add the tomatoes, cucumber, and red onion to a bowl. Drizzle with olive oil and lemon juice, season with dill, salt, and pepper, and toss gently. 4. Serve the lamb meatballs with a generous scoop of tzatziki and the Mediterranean salad.
