Coconut Lime Curry Salmon

This one-pan coconut lime curry salmon dish combines tender salmon fillets cooked in a rich coconut milk curry sauce with red curry paste, garlic, and ginger. Finished with lime juice and garnished with cilantro and green onion, it’s perfect served over coconut rice.

What you need

lb salmon
tsp salt

tbsp olive oil

Instructions
1: Slice the salmon into fillets and place them in a bowl with 1 teaspoon of salt and lime juice. 2: Heat 1 tablespoon of olive oil in a medium-high heat pan. Add the salmon fillets skin-side down and cook each side for 3 minutes. Remove from the pan. 3: In the same pan, add minced garlic and ginger, and cook until fragrant. 4: Stir in the red curry paste and cook until it’s slightly browned. 5: Pour in the can of coconut milk and lime juice, then bring the mixture to a boil. 6: Reduce the heat and add the salmon back to the pan. 7: Cook for 8 minutes or until the salmon reaches your desired temperature. 8: Finish off by adding more lime juice, cilantro, and green onion. 9: Serve the salmon over a bed of coconut rice.View original recipe
