Instructions
1: Heat a skillet over low heat and melt 1 tbsp of butter. 2: Crack the eggs into a bowl and scramble them. 3: Pour the scrambled eggs into the skillet and use a rubber spatula to continuously fold them gently for about 1 minute. 4: Add the cottage cheese into the skillet and fold it into the eggs. 5: Continue folding the eggs and cottage cheese mixture until it comes together, cooking low and slow for approximately 5 minutes to achieve a soft scramble. 6: Serve with cracked pepper and flaky sea salt.View original recipe
