Instructions
1: In a large bowl, toss the cubed chicken with olive oil, Greek yogurt, vinegar, lemon juice, and all the spices until evenly coated. Cover and marinate in the fridge for at least 20 minutes, or overnight for deeper flavor. 2: Chop the cucumber, tomatoes, and red onion, then season with olive oil, lemon juice, salt, and pepper to taste. 3: Thread the marinated chicken onto skewers, leaving a little space at each end. Ensure they fit in your air fryer basket. 4: Air fry at 375°F for 18-20 minutes, flipping halfway through, until the chicken is golden and fully cooked. 5: While the skewers cook, melt the butter in a small saucepan over medium heat. Add minced garlic and sauté until fragrant. Remove from heat and stir in fresh parsley and lemon juice. 6: Once the chicken is done, brush the skewers with the lemon garlic butter. 7: Serve hot with rice, Mediterranean salad, crumbled feta, and homemade tzatziki on the side.View original recipe
