What you need

oz parmesan cheese

tsp paprika

zucchini

tsp oregano
tsp salt

tsp ground cumin

cup brown rice

cucumber
tbsp fresh dill

tsp black pepper

pinch pepper

cup greek yogurt

cup bone broth
tbsp dried italian seasoning

tbsp olive oil

tsp dried thyme

lemon

tbsp dijon mustard

clove garlic clove

lb salmon

tbsp butter
splash red wine vinegar
Instructions
1. Add rice, broth, salt, and butter to a pot. Bring to a boil, then reduce heat and simmer, covered, until soft and fluffy. 2. Preheat oven to 425°F and line a baking sheet with parchment paper. Toss zucchini with olive oil, Italian seasoning, salt, and pepper. Arrange skin-side down with space between each piece. Sprinkle with parmesan if desired and bake 15 minutes, or until golden. 3. In a bowl or directly in the air fryer basket, coat salmon with olive oil and Dijon, then season evenly. Air fry at 375°F for 10–12 minutes, until tender and flaky. 4. Mix together yogurt, cucumber, garlic, lemon juice, olive oil, vinegar, dill, salt, and pepper. Chill until ready to serve. 5. Layer brown rice, salmon, zucchini fries, and a big spoonful of tzatziki & enjoy!!View original recipe
