High-Protein Cottage Cheese Banana Pancakes

My absolute favorite way to eat pancakes! I canโt remember the last time I made regular ones. These are high in protein, crispy on the outside, soft and fluffy on the inside, and you can mix the batter in just one bowl. Give them a try and thank me later ๐

What you need

dash salt

tbsp cottage cheese

banana

tsp baking powder

tbsp flour

dash cinnamon
egg
fresh blueberries
Instructions
1. Mash bananas in a bowl, then mix in baking powder, flour, cottage cheese, cinnamon, salt, and eggs until smooth. 2. Heat a skillet over low-medium heat and melt some butter. 3. Spoon 2 tbsp of batter onto the skillet. 4. After 2 minutes, add berries or chocolate if using. 5. Flip when the bottoms are golden and the tops start to bubble. 6. Cook for another 3 minutes.
