What you need

cup white rice

tsp garlic powder

can unsweetened coconut milk

lb boneless chicken thighs

Instructions
1. In a pot, combine the coconut milk, ½ cup of water, and the rice. Add a pinch of salt and bring to a boil. Cover, reduce heat, and simmer until the rice is cooked. Fluff with a fork, then finish with lime juice and a little more salt. 2. In a bowl, mix olive oil, honey, lime juice, and all the spices (salt, paprika, cumin, oregano, garlic powder, onion powder, black pepper). Add the chicken and toss to coat well. 3. Cook the chicken at 375°F for 20 minutes, flipping halfway through. 4. Combine pineapple, bell peppers, grilled corn, cucumber, lime juice, salt, and pepper. Add jalapeño if you like some heat! 5. Layer coconut rice, sliced chicken, and pineapple salsa. Add avocado for healthy fats and drizzle a little honey on top.View original recipe
