Instructions
1: Preheat your oven to 400º. 2: Coat chicken thighs with 1 tbsp olive oil, then mix in garlic powder, onion powder, oregano, parsley, paprika, chili flakes, and lemon juice. Ensure each side is coated. 3: Heat 1 tbsp olive oil in a cast iron pan. Place chicken thighs skin side down, cook until skin is crispy (5-8 minutes). 4: Flip thighs, pour in chicken broth. In a separate bowl, mix balsamic vinegar and honey. Pour over chicken. 5: Bake in the oven for 15-20 minutes or until internal temperature reaches 165º. 6: Add pomegranate quarters to the pan, allowing some seeds to fall into the juices. 7: Drizzle some of the juices over the chicken and garnish with fresh parsley.View original recipe
