Instructions
1: Heat 2 tbsp olive oil in a large pot. Cook leeks and celery for 20 minutes, covered, until soft. 2: Make a well, add remaining oil, anchovy, garlic, spices, salt, and pepper. Stir. 3: Add potatoes and broth. Cover, bring to a boil, and simmer until potatoes are tender. 4: Blend until smooth with a blender. 5: Garnish with fried leeks, croutons, cream, and seasoning.
